Pancakes you won't regret!

This ONE is a family favorite! We serve them with a scoop of cottage cheese, fresh fruit and of course, real Maple Syrup! Yum! One trick is to take bananas that are going to the "dark side", peel them and place in freezer bag. Then all you need to do is get them out of the freezer, nuke to thaw and they are ready to be mashed.

Save those Sides!

O.K. This great suggestion comes from Amy. It is so simple and makes total sense and I am embarrassed to say it had never occurred to me! Amy takes any veggie sides that have accumulated in the fridge during the week and throws them in a freezer bag. The yummies in that bag are then ready to be thrown into anything that makes sense in the future...chili, soup or a casserole. Makes sense and saves from waste!

Grap an Egg Snack!

Thought I would start us off with a recipe my friend, Ashley shared with me. Pretty sure a friend of hers passed it on to her! I thought these would be great to have on hand. An easy grab and go snack. The recipe itself is not "clean"(bacon is a suggestion) but you can adapt it with whatever ingredients your family likes. Ashley told me she makes a batch on Sunday afternoon and then has them available during the week. When I make my first batch, Ill try to post a picture. Enjoy! Egg Muffin Cups - Preheat oven to 375 degrees. Mix 6 eggs and 6 egg whites together and add 1/2 cup of unsweetened almond milk and 1 tbsp of dry mustard (can use other spices if you would like). Chop up your favorite veggies, green onions, low sodium ham, turkey bacon, etc. and low fat cheese. Spray muffin tins or silicone muffin cups with cooking spray and fill each cup 1/2 full of toppings, then pour the egg mixture around it. Bake 25 - 30 minutes until egg cups are puffy. Remove from oven and allow to cool for 10 minutes. Enjoy! 2 cups are 145 calories. Great for putting in baggies and enjoying for protein on the go!
Ok ladies. I thought in order to share our suggestions and recipes more easily. I would start this blog. We will be able to tag entries so that they are easily found when we want to refer back to them. FaceBook doesn't allow for that. I'll make every attempt to post anything you email or post on FB. Hope this is helpful! Happy Clean Eating!
